I always tell my clients that the key to loving your salad is having an incredible dressing. Store bought dressings are packed with sugar, unhealthy oils and lots of preservatives. Let’s be honest- they also don’t taste great. My go to quick and easy dressing at home is always a mixture of balsamic, dijon, honey and olive oil but it is fun to change it up from time to time.

One of the best ways to add loads of flavour to any dish is to utilize fresh herbs! I love using fresh herbs in all of my meals, and I ALWAYS have leftovers. What better way to use them then to throw them into a blender to make a delicious fresh dressing that is perfect for salads, pasta and even fish.

Be warned, this dressing is literally drinkable. It pairs really well with a salad filled with fresh seasonal vegetables, roasted sweet potatoes, toasted almonds and a hard boiled egg. What’s great is you can use pretty much any herbs of your liking.

Makes 1 cup

Ingredients:

• leaves of 2 sprigs of tarragon (about 1 tbsp)
• 1/4 cup packed fresh basil
• 1/4 cup packed fresh parsley
• 1/4 cup packed fresh dill
• 6 green onions (white part only)
• 2 tbsp rice wine vinegar
• 2 tbsp apple cider vinegar
• the juice of half a lemon
• 1 tsp dijon mustard
• 1 tsp honey
• salt and pepper to taste
• 1/2 cup extra virgin olive oil

Directions:

1. Add all ingredients from tarragon to salt and pepper to a high powered blender or food processor and blend until combined.

2. While the blender is running, slowly add the olive oil to emulsify the dressing.

3.Store in the refrigerator in an airtight container for 7 days.

Matcha Green Tea Chia Pudding

Is it just me or is matcha EVERYWHERE lately? I was a little intimidated when I bought my first bag of matcha. With so many types, price points and brands, I really had no idea where to start. My advice to you is to go to a tea speciality store and have them explain their different varieties and choose the variety that suits your taste buds and of course, your wallet. For me, a creamier variety was a priority as I planned to make lots of lattes with it. If baking with matcha is what your after, you might not need a very expensive variety. Knowledge is power. Ask your local speciality shop!

So what is so great about matcha? Well besides for it’s super delicious green tea taste it is loaded with superfood goodness. Unlike other teas, you actually drink the leaf which maximizes nutritional benefits. Matcha helps boost your metabolism and immunity. It gives you an unbelievable slow releasing energy boost and is loaded with antioxidants. With all that said, I hope you love this recipe! Matcha Chia PuddingMatcha Chia Pudding

Ingredients

serves 2
• 1/2 cup Pure Leaf Unsweetened Green Tea or steeped green tea of your choice (cold)
• 1/2 cups unsweetened almond milk
• 1/2 tbsp pure maple syrup
• 1 tsp pure vanilla extract (non alcoholic is best)
• 1 tsp matcha powder
• 1/2 tbsp coconut cream
• small pinch salt
• 6 tbsp chia seeds

Directions

1.Blend all ingredients except for the chia seeds in a blender until combined and smooth.

2.Add chia seeds to a large jar or container. Pour blended mixture over the chia seeds and shake well. Place in the refrigerator and try and shake the container at least two more times before leaving it to thicken overnight (or for a minimum of 3-4 hours).

3.After it has thickened, pour into a bowl and top with fresh fruit, nuts and coconut flakes. Enjoy!

One of the most challenging grocery items to find is a gluten free, refined sugar free and GMO free cereal. I have always loved a bowl of cereal, but since getting rid of gluten from my life, I have failed to find a satisfying replacement. Most gluten free cereals have loads of added sugars and are mostly made of corn. With so many nutritious and fibre packed gluten free grains, I found myself frustrated at the lack of grocery store options.

As my similar frustration with gluten free breads led to my recipe for the healthiest bread ever, I now introduce to you the healthiest cereal ever.

Using a base of simple puffed grains, I add cinnamon, coconut oil, vanilla and maple syrup to make crunchy cereal. Puffed grains are an amazing no added ingredient product. The problem however is that they are tasteless, and lacking texture. By adding healthy fats and vitamin packed sweeteners, the result is a crunchy protein packed cereal without any guilt! Feel free to change your flavours by adding cacao powder, dried fruits, honey and so on. You can also choose one puffed grain or choose another variety. Other healthy options are puffed brown rice and amaranth.

In under 15 minutes you’ll have a delicious and healthy homemade cereal. Top with fresh fruit, chia seeds, and nuts and serve with homemade almond milk. Hope you love it.

Homemade Healthy Cereal

Perfect smoothie bowl topping!

Ingredients:

•1/4 cup coconut oil (melted and cooled)
•1/4 cup maple syrup or honey
•1 tsp pure vanilla extract
•1 tsp cinnamon (optional)
•2 drops liquid stevia or 1/2 tsp powder
•pinch of salt (pink himalayan is a plus!)
•3 cups puffed quinoa
•3 cups puffed buckwheat
•1 cup gluten free oats

Directions:

1. Preheat oven to 325 F. Line a large baking tray with wax paper.

2. In a large mixing bowl, whisk cooled coconut oil, maple syrup, vanilla, cinnamon, stevia and salt until combined.

3. To the mixture add puffed quinoa, buckwheat and gluten free oats. Using a large spoon mix until the dry ingredients are well coated.

4. Pour cereal unto the baking sheet and spread evenly. Bake for 25-30 minutes, tossing halfway through baking time. Allow to cool and store in an airtight container for 2-3 weeks.
