These cereal truffles are so easy to make! Made with better for you ingredients, they make a perfect holiday treat to enjoy with the entire family. If peanut allergies are a problem, sub peanut butter with sunflower butter or coconut butter. Decorate the truffles with coconut flour to make them look like snowballs, or add coloured sprinkles to make them festive! Hope you enjoy them, happy holidays!
Peanut Butter Cereal Truffles
Naturally sweetened with maple syrup, and completely gluten free!
Servings 12 Truffles
Ingredients
- 1 cup natural peanut butter
- 1 tbsp coconut oil
- 1 tsp real vanilla extract
- 1/4 cup maple syrup
- 1 cup cereal of choice I used crispy rice cereal
- 1 cup chocolate chips
- 1 tbsp coconut oil
- sea salt, coconut flour, or sprinkles for decoration
Instructions
- Place parchment paper on a large cookie sheet. In a microwave safe bowl, or on stovetop, heat peanut butter, maple syrup and coconut oil. Add vanilla and whisk until combined.
- Mix cereal into peanut butter. Place in freezer for 10-15 minutes to cool.
- While it's cooling, melt chocolate chips and coconut oil in 30 second intervals in microwave, or on stove top until it becomes liquid.
- Using a cookie scoop or measuring cup, form cereal mixture into balls. Place ball into melted chocolate and then transfer to prepared cookie sheet. Top with desired toppings. I like coconut flour to make them look like they are dusted with snow for the holidays! Course flakey salt is my second favourite! Other options are chopped nuts, chia seeds, and coloured sprinkles.
